Intro to the course:

This non certification course will run for 6 weeks on a Thursday evening.   Dishes prepared by you are all suitable for home freezing and are planned to make up 2 three-course menus.   You will be led by the tutor from start to finish in ‘bite sized’ segments to ensure everyone maintains the same pace and is never overwhelmed.

Who is the course for?

Candidates who have a genuine interest in dining with a refined touch whilst impressing their guests.

What will I study?

During this course, you will:  

  • Develop knife skills.
  • Understand Health and safety in the kitchen.
  • Develop an understanding of quality Scottish and local produce.
  • Use ingredients not commonly used.
  • Refine plating skills.
  • Build a foundation upon the practical skills and culinary knowledge. 
  • Further develop your knowledge and understanding of a wide range of ingredients, culinary terminology, waste control, portion control and special dietary requirements.
