This course offers a solid grounding for progressing to an advanced-level course or an entry-level post in the sector. Chefs are in high demand with an estimated 11,000 chef vacancies predicted over the next year across the UK. You will learn the basics for working as a junior chef through a mix of theory and practice.

Who is the course for?

This course is ideal for anyone wanting to develop their career in the cooking industry. It will suit school leavers or those looking to change career or take their first steps into the industry.

What will I study?

You'll develop advanced practical food preparation, cooking and presentation skills. You'll also learn about the professional kitchen, food safety legislation, terminology, products, trends, provenance, sustainability, cost and control, employability, food hygiene, and health and safety. 

You'll learn through group work, lectures, industry visits and guest speakers.

Ongoing assessments.

What are the entry requirements?

One or more of the following: 

  • NC Professional Cookery at SCQF level 5 
  • SVQ Professional Cookery at SCQF level 5 
  • Equivalent recognised qualification 
  • Relevant work experience 
  • Acceptance may depend on a skills test and interview.

What are the interview arrangements?

One-to-one or group interview with lecturing staff.
