Chefs are in high demand with an estimated 11,000 vacancies predicted in the UK over the next year. This course introduces you to professional cookery and progression to a higher-level course or entry-level role in the industry. You'll learn about working as a chef in an entry-level position through a mix of theory and practice.

Who is the course for?

This course is ideal for anyone wanting to develop their career in the cooking industry. It will suit school leavers or those looking to change career or take their first steps into the industry

What will I study?

You'll learn practical food preparation, cooking and presentation skills, and about professional kitchens, food safety legislation, terminology, products, trends, provenance, sustainability cost and control, and employability. You'll learn through groupwork, lectures, industry visits and guest speakers.

How will I be assessed?

Ongoing assessments.

This course leads to employment in the hospitality and catering industry as a trainee commis (junior) chef.

What are the entry requirements?

One or more of the following: 

  • NPA Professional Cookery at SCQF level 5 
  • Relevant SVQ at SCQF level 4 
  • Skills for Work Hospitality 
  • Equivalent recognised qualification 
  • Relevant work experience

What are the interview arrangements?

One-to-one or group interview with lecturing staff.
